Stracciatella Soup is my Italian family's version of chicken soup for the soul. It's comforting, flavourful, satisfying and quick to make! This keto-friendly soup uses low carb staple ingredients, and it's my go-to recipe when I need something quick to make  for my family, especially during the winter months. You can customize it with pastina, which is Konjac noodles for La Dolce Keto, or add some cooked chicken or a dollop of your favourite hot sauce. I hope Stracciatella soup becomes a nourishing favourite in your family.

Stracciatella Soup

Ingredients
Serves |4
1L chicken broth
3 eggs
1 cup grated Parmesan cheese
1 garlic clove, minced
1/4 cup parsley, chopped (more to taste)
Salt and pepper to taste
Instructions

In a medium bowl,mix together the eggs and grated Parmesan cheese.

In a large saucepan, gently brown the garlic on medium heat. Add the chicken broth and bring to a simmer.

Pour in the egg and parmesan mixture into the simmering broth. Stir to break up the cheese and egg.

Add parsley, salt and pepper to taste.

If you enjoy heat, add a dollop of spicy Italian bomba sauce or your favourite hot chili pepper.
Recipe Notes:

For our family dinners, I often add cooked chicken to the soup.
