keto Cinnamon Swirl Cake

This sugar-free cinnamon roll cake, topped with a cream cheese glaze, offers all the comforting flavours of a traditional cinnamon roll without causing a glucose spike. Moist and flavourful, it pairs perfectly with a warm beverage on a low-carb lifestyle! This cake is easy to make and has become a staple for our family's Christmas morning. I prepare the cake the night before, then pop it in the oven before the household stirs and let the aroma waft and fill the house. Made with wholesome ingredients and packed with cinnamon goodness, this cinnamon roll cake satisfies cravings without derailing ketosis.

Cinnamon Swirl Cake with Cream Cheese Glaze

Serves |8
1 cup almond flour
2 teaspoon baking powder
2 eggs
1/4 cup melted butter
1/4 teaspoon salt
Cinnamon Swirl Filling
2 tablespoons erythritol
1/4 cup Swerve Brown (erythritol sweetener)
2 teaspoons cinnamon
Cream Cheese Glaze:
1/4 cup heavy cream (Or 2 tablespoons heavy cream and two tablespoons water for a lighter variation)
Quantity and Name 1 teaspoon vanilla extract
1/4 cup unsalted butter, softened to room temperature
1/4 cup Swerve Brown (erythritol sweetener)
2 teaspoons cinnamon
Cream Cheese Glaze
4oz cream cheese
1/2 teaspoon vanilla extract
2 tablespoons erythritol or allulose
Prepare the Cake Batter:
Preheat the oven to 350F.
Lightly grease an 8x8 pan or 8x6 glass tupperware with butter or avocado oil. (I use an 8x6 pyrex with a lid for easy fridge to table slicing)

In a large bowl, whisk together the almond flour, erythritol, baking powder, and salt.
Stir in the eggs, whipping cream and vanilla extract.Pour the almond flour mixture into the prepared baking pan.
Cinnamon Swirl Filling:
Combine the softened butter, Swerve Brown, and cinnamon. I put the mixture in the oven to warm slightly for a well combined soft consistency that's easy to swirl through the batter.
Drop the cinnamon filling by spoonfuls on top of the cake batter.

Using a knife, pull the cinnamon filling through cake batter.

Bake 30 minutes, or until the cinnamon roll cake is golden brown.
While the cake is baking, prepare the cream cheese glaze.
Cream Cheese Glaze
Whip the cream cheese, erythritol and vanilla mixture until smooth with an egg beater. If you're using a granular sweetener, ensure that is blended smoothly. Once the cinnamon roll cake has cooled slightly, layer the cream cheese glaze on top of the cake. Enjoy!
Recipe Notes:

You can prepare the Cinnamon Swirl Cake the night before and bake it the next day.
