This recipe is inspired by Egg Life Foods, which aren't available in Canada at the time of this post. However, if you're in the USA, I highly recommend these wraps. I found them at Whole Foods in the refrigerated section, and I imagine other health food store chains may carry them as well. They made perfect low-carb sandwiches for my family while we were traveling.
Cooking the wraps long enough is key for an ideal wrap texture. If you hear a sizzling sound or feel a squishy texture when pressing down on the wrap with a spatula, the wrap isn't done yet. I also check for moisture when the wraps are on the cooling rack. If they still feel moist after cooling, I'll put them back in the pan for a few more minutes.
